    Vegetarian burgers

    If you are vegetarian or if you follow a vary diet with lots of veggies, this burgers are delicious and very tasty. In this case, I will share also the recipe of a spicy sauce that gives the burgers a spicy touch. Let’s get going!

    Ingredients

    300 grs spinach (only the leaves)
    1 yellow capsicum
    1 red onion
    2 garlic cloves
    1 carrot
    1 egg
    A handful parmesan cheese
    2 tbsp breadcrumbs
    2 tbsp olive oil
    Salt
    Pepper
    Paprika
    -For the sauce: 2 ripe tomatoes
    1 tbsp tomato paste
    1 chilli
    1 garlic clove
    1 tbsp balsamic
    2 tbsp olive oil

    Start making the burgers

    Preheat oven to 180°C. To start making the burgers, cut the capsicum and the onion in small dices. Then, chop the garlic and grate the carrot. Place a pan with 2 tbsp of Olive oil and sautee the onion and the capsicum, and at the end, when softened, add the garlic. Now is time to add the spinach leaves and the grated carrot. Cook for about 3 minutes. Remove the ingredients from the pan and place them in a bowl. Season with salt, pepper and paprika. Then, add the egg and mix. To finish, add the breadcrumbs and combine everything.

    Shape the burgers and cook

    With your hands cleaned, form balls and place them on a baking tray, pressing a bit in the centre of each ball, to make the burgers. You can use an egg ring to make the shape easily. Cook in the oven for about 12-15 minutes.

    Prepare the ingredients for the sauce

    To make the sauce. Firstly, blanch the tomatoes. Make a X on the bottom of the tomatoes and bring them to a boil in a saucepan. After 30 seconds bowling, remove and transfer them into a bowl with cool water or ice bath. Now you can peel them easily. Then, cut the tomatoes in small dices and chop the garlic and chili (remove the seeds if you don’t like the spicy).

    Cook the sauce

    In a pan, with 2 tablespoons of olive oil, sautee the chili, garlic and after a minute, add the tomato dices, tomato paste and balsamic.Let it reduce for 5 minutes. To finish, remove from the heat, taste and adjust seasoning and spicy. When the preparation is cooled, process with a hand mixer until you get the sauce consistency.
