    Pear and blue cheese salad

    If you like blue cheese balanced with a touch of sweetness, this salad is for you.

    A very refreshing and complete dish. A good option for lunch boxes and picnics.

    Ingredients

    250 grs green beans
    200 grs blue cheese (Roquefort, Stilton or Gorgonzola)
    1 pear
    100 grs walnuts
    100 grs rocket
    1 chicory
    -For the vinaigrette: 3 tbs Extra Virgen Olive Oil (EVOO)
    1 tbs Balsamic vinegar
    Salt
    Ground black pepper

    Directions

    1.

    Prepare the green beans

    Wash the beans, remove extremes and steam them until just crunchy, for about 5 minutes.
    Mark as complete

    Add the rest of veggies and pear

    Wash the rocket and chicory and dry well. Do the same with the pear and cut it in 1/2 cm slices.
    Mark as complete

    Add the cheese

    Crumble the blue cheese with your fingers and cut the walnuts in halves.
    Mark as complete
    4.

    Blend the vinaigrette and serve

    In a small bowl, whisk together the vinaigrette ingredients. Place the leaves in a large bowl or tray, add the green beans, pears, blue cheese and walnuts. To finish, pour over the dressing.
