    Marinated roast chicken

    Juicy and tender whole chicken. Marinated with soy sauce, lemon, honey, garlic and herbs. Beautiful with a fresh salad and roasted vegetables on the side.

    1 Whole organic chicken (preferably)
    1/2 cup chicken stock
    3 garlic cloves
    1 lemon
    1 large onion
    Oregano
    Salt
    Pepper
    A handful mixed herbs
    Extra Virgin Olive Oil (EVOO)
    3 tbsp soy sauce
    2 tbsp honey
    A couple of rosemary branches
    Veggies as a side (potatoes, sweet potatoes, zucchinis, eggplants,...)

    Prepare the marinade

    First of all, place a bowl and add all the marinade ingredients: soy sauce, honey, EVOO, herbs, salt, pepper, lemon juice and 1 garlic clove. Add the marinade to the chicken and leave it in the fridge to rest for a couple of hours. Remember to remove it from the fridge 15-20 minutes before take it to the oven.

    Preheat oven and add the ingredients to a tray

    Preheat oven 180ºC. Now is time to remove the chicken from the marinade, drip off the excess of liquid and place a baking tray with a drizzle of EVOO, the sliced onion and garlic cloves. Place the chicken, breast down side, add the stock and roast it for 20-25 minutes for each 500 grs, until cooked, golden crispy on the outside and tender juicy inside. Two important things to have in mind. Don't forget to pour the cooking juices over, every 20 minutes to avoid to get dried and burnt and to flip the chicken half way through. Let it to rest for 15 minutes before serving.
    FOR THE SIDE: line the vegetables, in this case potatoes and sweet potatoes, on a baking sheet with EVOO, salt and rosemary and take to the oven for the last 45 minutes of cooking.

    Notes

    -Don't wash the chicken before cooking, it could spread bacteria over your hands, surfaces and equipment in the kitchen.
    -If you use a frozen chicken, defrost it in the fridge, never outside.
    -Chicken meat should be well cooked.
    -If you have the chance, choose organic chicken or free range. It has better taste, less fat and is a healthier choice.
    -Don't forget to take the chicken to room temperature 15-20 minutes before cook it.
    -Tie the legs together with a twine or string to cook evenly. And pull the wing tips up and tuck them back behind the neck zone.
