Fresh cheese salad
Fresh salads are a great option for a starter or as a side. If you add a light cheese, it will give them saltiness and creaminess. With a simple vinaigrette and a touch of herbs the result is a delicious salad.

100 grs fresh cheese, or feta or light mozzarella | |
3 fresh and juice tomatoes (in this case I’ve used “Beef tomatoes”) | |
150 grs wild rocket | |
1 small red onion | |
1 tbsp sunflower seeds | |
A handful of black olives | |
-For the dressing: 3 tbsp Extra Virgen Olive Oil (EVOO) | |
Salt | |
White ground pepper | |
A handful chopped parsley | |
1 tbsp wine vinegar |
Directions
1.
Make the salad
Simply cut the tomatoes in eights, the onion in thin slices and the cheese in cubs.
Then, place the rocket at the bottom of a salad tray or bowl, add the tomatoes, onion, cheese, seeds and olives.

Mix the salad dressing
In a separate bowl, mix the EVOO, wine vinegar, salt, pepper and chopped parsley.
Pour the vinaigrette, toss, and it will be ready to enjoy!
