Eggplant mini towers
Simple, nourish and yummy veggie dish. Grilled eggplant layers with fresh tomato slices, caramelized onion and melted cheese. You can make it vegan with tofu or vegan cheese.

1 large eggplant | |
2 Roma tomatoes | |
1 red onion | |
1 tbsp sugar | |
1 tbsp Balsamic vinegar | |
Extra Virgin Olive Oil (EVOO) | |
100 grs Port Salut or Low fat mozzarella cheese | |
Oregano | |

Directions

Slice eggplant and prepare ingredients
Cut eggplant in 1/2 cm slices. Grill with EVOO until a bit smooth and lightly golden.
Meanwhile cut the tomatoes and onion in thin slices.
Grate the cheese and reserve.
Mark as complete

Caramelize the onion
Add the onion Julienne (thin slices) to a frying pan with 2 tbsp of EVOO to medium heat stirring until it gets slightly golden and soft.
Now is time to add sugar and balsamic vinegar and leave it to cook and caramelized for about 8 minutes stirring and over low heat.

Preheat oven, prepare a baking tray and cook
Preheat oven to 180°C.
Prepare a baking tray with parchment paper and start building the mini towers. Start adding one layer of eggplant, leave 1 cm space between them. Then place a slice of tomato over, the caramelized onion and the grated cheese. Repeat the process 2 more times.
Drizzle each tower with EVOO, a pinch of salt and pepper and oregano and take to the oven.
They will be ready and with the cheese melted after 5-10 minutes, depending on your oven.

Notes
-You can use vegan cheese or tofu or any variety of cheese you use to melt.
-The caramelized onion I shared in this recipe is an easy and quick version.
-You can finish the eggplant towers in the microwave but they will sort a bit watery and pale.
